Vinification
Manual late harvest in small boxes, gentle destemming, maceration and fermentation on the skins for 7-8 days. Ageing takes place for two years in new barrique oak barrels. The Bionzo is only produced in peak years and is limited to 2000-3000 bottles.

The winery is located in Costigliole d'Asti. This small town, steeped in history, lies between Langhe and Monferrato. The production of great wines from this area has made the surrounding hills world-famous. The Azienda Boeri produces already in the 4th generation the renowned Barbera d'Asti DOCG and Moscato d'Asti DOCG, together with other typical wines of Astigiano. The winery, with 10 hectares of vineyards, is situated on the Collina Bricco Quaglia, a hill which is bathed in sunshine from early to late.
