Spicy and lively nose. A creamy Blanc de Blancs (100% Chardonnay) with a touch of sponge cake. Notes of lemon, almonds and dry apricots on the palate.
Vinification
Only the first press, called cuvée, is used for the production of the young wines. Aging on the yeast: at least 3 years.

LEGRAS & HAAS
François Legras and Brigitte Haas, both passionate winegrowers and wine connoisseurs, met in 1967, and with their three sons Rémi, Olivier and Jérôme, the company Legras & Haas was founded in 1991 in Chouilly at the northern tip of the Côte des Blancs. The speciality of this house is the production of Chardonnay grapes. Only the best grapes are used for our own production. The rest is sold on to renowned large champagne houses. The Chardonnay-based Blanc de Blancs are the strength of this house. Even the base "Tradition" and the rosé, have a 50% Chardonnay content. The winegrowing family itself owns 37 hectares of its own vineyards, 17 hectares of which are in Chouilly alone, and produces around 150,000 bottles a year.
