Vinification
Fermentation in wooden barrels at controlled temperature; ageing for 12 months in wooden barrels, followed by 12 months of refinement in bottle.

The grapes, which are cultivated exclusively using natural methods, are monitored with great care and attention during all their vegetative phases and with particular attention during the ripening period. They are then vinified in the winery by adding home-grown yeast.
