This wine has an intense ruby red color with delicate garnet hues. Its aroma is characterized by a strong territorial character, with fruity accents of red fruits such as cherries and sour cherries dominating. These fruity notes are complemented by floral tones, particularly violets, as well as savory and mineral nuances that are harmoniously interwoven with fresh spices and herbs. On the palate, the wine impresses with balanced and incisive tannins, a crisp texture and lively acidity, which leads to a long-lasting fruity and spicy finish.

The grapes are harvested manually in small baskets, after which they are cooled overnight before being carefully checked on two sorting tables. Natural fermentation with local yeasts takes place in terracotta amphorae as well as in small stainless steel tanks. After maceration, i.e. the soaking of the grape skins, the wine is transferred to barriques and partly to amphorae, where it undergoes malolactic fermentation. This is followed by a 16-month maturation phase in French oak barriques and terracotta amphorae. It is also aged in the bottle for at least three months before being released onto the market

CHIOCCIOLI
Stefano Chioccioli, one of the most respected and excellent winemakers in the region, runs the family winery. Under his care a real jewel was created in a very short time. Together with his two sons Niccolò and Enrico, they take care of the vineyard in Gaiole Chianti as well as the vines in the two classico zones Quercegrossa and Gaiole Chianti. The soils are medium clayey, rich in limestone and marl. With 5000 vines per hectare and an average yield of 30 hectolitres per hectare, the yield is rather small and far below the legal requirements.
