Light straw yellow color. Intense aroma of citrus, white and tropical fruits, balsamic notes of Mediterranean shrubs and a touch of iodine on the nose. Freshness and saltiness set the rhythm and underpin the aromatic, fruity and balsamic notes.
Vinification
The grapes are cooled down to 10 °C before destemming and soft pressing. A small percentage is left on the skins for 48 hours before fermentation begins. The wine then remains on the lees for at least 4 months.
