The Optimus, a rich, velvety and generous wine, with lush cherry aromas.
Vinification
Optimus is made from Ciliegiolo vines that ferment spontaneously in large vats thanks to the indigenous yeasts on the skins. The aging takes place in oak barrels where the wine remains for 10 months. With great care, the processes from harvesting to crushing and bottling are carried out by hand according to the biodynamic method.
