Intense aromas of passion fruit, elderflower, gooseberry, grapefruit, white peach and green asparagus. A crisp acidity and a long, slightly mineral finish round off the diverse bouquet.
Vinification
The grapes are crushed in a low-oxygen environment and left to stand briefly to extract additional aromas and fullness from the grape skins. This is followed by very gentle vinification, also in a low-oxygen environment, to preserve the fresh, varietal fruit of the Sauvignon Blanc.
