- Panzanella (Tuscan salad reinterpreted) with fresh brioche bun, confit cherry tomatoes, caramelized onion cream and burrata foam
- Piadina with two toppings: Spicy chicken steak with carrots and coriander / Roasted wild broccoli with peanut sauce and flips
- Agrodolce of Swiss pikeperch with leek and radish
- Veal Vitello Tonnato with tuna sauce and crispy capers
- Onion essence with pioppino salad and Zürichschum espuma
- Polenta slice with bolognese and parmesan crunch
