The individual dishes that we will cook or prepare together:

  • Panzanella (Tuscan salad reinterpreted) with fresh brioche bun, confit cherry tomatoes, caramelized onion cream and burrata foam
  • Piadina with two toppings: Spicy chicken steak with carrots and coriander / Roasted wild broccoli with peanut sauce and flips
  • Agrodolce of Swiss pikeperch with leek and radish
  • Veal Vitello Tonnato with tuna sauce and crispy capers
  • Onion essence with pioppino salad and Zürichschum espuma

Sabrina learned her culinary craft at Le Cordon Bleu Culinary School in Paris and perfected it in fine dining with two-Michelin-starred chef Heiko Nieder at The Restaurant. With surprising flavor combinations and precision, Sabrina Cipolla creates unique works of culinary art on her favorite canvas - the plate. She draws inspiration for her menus from everyday life. Be it from nature, architecture or her surroundings.

As a qualified sommelier and director of the Accademia Vergani, Luana Del Rio has dedicated herself to making wine knowledge accessible to everyone. With her creative courses and events, she takes people interested in wine on an exciting journey of enjoyment. Luana firmly believes that wine connects and tells stories. Her passion is to impart this knowledge in a relaxed and inspiring way.
