On the nose, this Champagne reveals full-bodied aromas of rich pastry before transitioning to notes of pear, black cherry and blackberry. Notes of dried apricot and hazelnut soon follow.The palate is dominated by full, fresh flavors of grapefruit, lemon and ginger, which pave the way for delicate notes of cherry, pear, mirabelle plum and apricot. The fresh acidity continues through to the long, powerful finish.
Vinification
The Icône Brut has a 40% reserve wine. Aging of at least 2 years on the lees.
Accompanying
Brut Icône is an excellent Champagne for the aperitif and goes perfectly with savory appetizers. Later in the evening, it also combines well with savory dishes.

The history of the Cattier family begins in 1625 in Chigny-les-Roses, where they planted vines. Since then, the winery has been passed down through 12 generations. Alexandre Cattier is now the thirteenth descendant to work the vines and make his own champagne. Under the guidance of Jean-Jacques Cattier, the brand has evolved through hard work and passion. Most of Cattier's cellars are located below the family estate in Rilly-la-Montagne. They are over 150 years old and provide ideal conditions for bottle aging. With 119 steps on one side and 136 on the other, these cellars are among the deepest in Champagne. They were excavated on three levels with different vault styles: Gothic, Romanesque and Renaissance. Our Brut Premier Cru ages there for over four years, even though the regulations only require 15 months. Our highest quality bottles even require over eight years to develop their unique flavors.
