The nose is dominated by intense aromas of biscuit and acacia flowers, followed by plums. The palate is lively and equally intense, with notes of brioche and peach complemented by citrus. Soft nutty flavors and notes of acacia honey and wild berries.
Vinification
The Premier Cru has a 20% reserve wine. Aging on the lees: at least 36 months.

The history of the Cattier family begins in 1625 in Chigny-les-Roses, where they planted vines. Since then, the winery has been passed down through 12 generations. Alexandre Cattier is now the thirteenth descendant to work the vines and make his own champagne. Under the guidance of Jean-Jacques Cattier, the brand has evolved through hard work and passion. Most of Cattier's cellars are located below the family estate in Rilly-la-Montagne. They are over 150 years old and provide ideal conditions for bottle aging. With 119 steps on one side and 136 on the other, these cellars are among the deepest in Champagne. They were excavated on three levels with different vault styles: Gothic, Romanesque and Renaissance. Our Brut Premier Cru ages there for over four years, even though the regulations only require 15 months. Our highest quality bottles even require over eight years to develop their unique flavors.
