Dark violet colour; mature nose with a harmonious aromatic development on the palate. The wine is reminiscent of Amarone and has the same characteristic notes of dried fruit and vanilla. An elegant and complex wine with a magnificent finish.
Vinification
The hand-picked grapes are laid out on straw mats in order to achieve a loss of liquid or a concentration of berries. The vinification is followed by 12 months of barrique ageing. A rarity, harvested from vines over 80 years old.

The winery, which is owned by the sisters Vittoria and Maria Teresa Vallone and Francesco Vallone, consists of the following three bases Tenuta Flaminio in Brindisi (310 ha), Tenuta Castel Serranova in Carovigno (312 ha) and Tenuta Iore in San Pancrazio Salentino (40 ha). The main part is 170 hectares planted with vines, 120 hectares with olive trees, followed by an area for artichoke and vegetable cultivation. Due to its legendary Graticciaia, one of the best wines of southern Italy, Vallone is known far beyond the Italian border. Since 2007, Graziana Grassini, one of the most sought-after oenologists in Italy, has been responsible for the development of the wines. She has given the wines their own style.
