Straw yellow and cloudy in the glass with golden reflections. On the nose, fresh and floral notes of stone fruit and quince, with a great balance of freshness and acidity on the palate and a citrus finish.

The grapes come from 30-year-old vines planted 350 meters above sea level and harvested by hand at the beginning of September. The grapes are destemmed and cold crushed for a few hours, gently pressed and fermented at 18 °C with indigenous yeasts. A small selection of the must is stored in a small tank at 0 °C. In February, the white wine is blended with the must and bottled with its own yeasts. The must still has some residual sugar and is in the middle of fermentation, which means that it continues to ferment in the bottle in an uncontrolled manner and acquires its perlage. The wine is not fined, filtered or sulphurized.
