Seductive notes of berries, cherries and herbs. These harmonious accents continue on the palate without sweetness and are complemented by lavender and a touch of chamomile.
Vinification
Harvesting takes place early in the morning. After pressing, the must is pumped into steel tanks, fermented spontaneously and continuously mixed with the yeast attached to the bottom (bâtonnage).

For the Rosato Lemár, the grapes are harvested by hand early in the morning between 4 a.m. and 9 a.m. in small boxes of 10 kg each. They are then immediately placed in a refrigerated container to bring the core temperature below 7°C. This prevents spontaneous fermentation of the grapes. This prevents spontaneous fermentation of the grapes and their oxidation. In the cantina, the unclean grapes are sorted out on a selection table. A process that is extremely rare in rosé production.
