Vinification
Saigneé from the best Pinot noir. Fermentation at approx. 16°, 21 days fermentation time with wild yeast. Maturation in used barriques for 4 months. Second fermentation in the bottle, 9 months ageing on the lees. Lees shaken by hand for 21 days, then disgorged.
