Notes
Straw yellow color with golden reflections; very fine and intense perlage. The aromatic palette goes from citrus, white fruit, herbs such as mint to spicy notes of ginger and cardamom. The palate is fresh and invigorating.
Vinification
Fermentation of the base wines takes place separately for each variety in stainless steel at a temperature of 14-16 °C. The bottle fermentation lasts about 38 months. In the pas Dosé there is no addition of the so-called "liqueur d'expedition", but only refilling wine from other bottles.
