After standing for 12 hours, the must ferments in barrels of different sizes of used French oak. Malolactic fermentation and aging during 11 months on the lees in French oak barrels and another 5 months in stainless steel tanks.

Cantalapiedra was founded in 2014 by Isaac and his son Manuel. Direct descendants of a family of winemakers who had always sold their grapes to other producers, Isaac and Manuel created Cantalapiedra with the aim of producing terroir verdejos. Cantalapiedra has 20 hectares of certified organic vineyards in La Seca, Valladolid and Zamora. Isaac and Manuel also apply biodynamic practices, both in the vineyard and in the cellar, which has led them to produce their wines under the appellation Vino de la Tierra de Castilla.
