Vinification

The monopollage of the House of Boroli is called Brunella. A historic vineyard, and known since the 16th century for its exceptional grapes. The site is located at the western end of the Villero zone in Castiglione Falletto. The exposure is south-southwest, the soils are mainly clayey and calcareous, of medium texture and interspersed with sand. Alcoholic fermentation in stainless steel tanks for 10-12 days at controlled temperature. Maceration for 20-25 days. Malolactic fermentation in stainless steel tanks at controlled temperature. Aging in large oak barrels (1000-1500 l) for 18 months. Aging in bottle for at least one year.

At Boroli, everything began in the 1990s. Silvano and Elena Boroli founded the eponymous winery in Castiglione Falletto, in the eastern part of the Barolo area. In 2000 Achille joined the company and today it is run by the second generation. In the house of Boroli, they are fully committed to quality. This is also evident in their own restaurant. Within a very short time, it has earned a Michelin star. Boroli: A sensational discovery for us. In addition to the basic Barolo, Boroli's portfolio also includes three single-vineyard Baroli: Cerequio, Villero and Brunella. Brunella is a monopollage. This means that only Boroli maintains vines on this vineyard. Quality without compromise. This is the credo Boroli follows in winemaking. Their wines are terroir-based and can be classified as rather traditional in style. They are lean and mineral wines that wonderfully reflect the character of the Nebbiolo grapes.
