Great importance is attached to the time of harvest and duration of maceration in order to extract soft tannins in a balanced manner and to emphasize the aromatic richness of this grape. Malolactic fermentation is followed by 18 months of ageing in French oak barrels.

This winery was founded in 1984 by Michele Satta. After a few ups and downs, he established himself at the top of the Maremma producers. The Maremma area (near Grosseto), with its calcareous soils and vineyards facing the sea, has a great potential for quality. The area has gained world fame thanks to the Sassicaia. In 1993 Michele Satta started a trial and planted Cabernet and Merlot, soon followed by Syrah vines on about 7 hectares. These varieties are vinified separately and later used to assemblage for his famous Piastraia or the new Bolgheri DOC. Meanwhile the winery covers 25 hectares of vineyards.
